MLW Meal # 3: Grilled Salmon with Capers

I am not going to post every single dish I'll be making 'til the day I get to my ideal weight!:-)  But this week is crucial as the first week always is... so this keeps me motivated.  I am very pleased with how this dish turned out - thank God for stove-top cast iron grille.  Also, my rule of thumb for making these healthy dishes - it shouldn't take me more than 30 minutes.

Wild Salmon Fillet 120/35
Salmon Marinade (~72/71):
Olive Oil, garlic, parsley, onion powder, rosemary, balsamic vinegar, sea 
salt, freshly cracked black pepper
1 tbsp Capers 2/1
30 grams mixed greens 9/3
Salad Dressing (~72/71):
Olive Oil, garlic powder, onion powder, balsamic vinegar, lemon juice, 
sugar, sea salt, freshly cracked black pepper

  1. Dianne, that looks SO good! So fresh and healthy looking. Especially now that I've been in this strange phase of wavering on being vegetarian and craving seafood (and yes, wild salmon tops that list).

    And capers are awesome! Didn't think to combine it with salmon, but it would make sense for the tang of the capers to cut through the richness of the salmon...(imagine lightbulb flashing)

    Oh... just had a flashback... back home (in Manila) one of our favorites for salmon was to make a mango salsa with it - just ripe mango, tomatoes, olive oil, a little balsamic, and fresh basil. We just used it on top of either baked or seared salmon. YUM!

    1. I love capers! Whenever I make meals, it's usually whatever-is-in-the-fridge/pantry, so I try to be creative - there are palpak times too hehehe!
      And yeah, I was surprised to see in your blog you've been eating fish, but good for you!
